The 'Top Chef' judge spoke with Terry Gross about broken food supply chains, food waste, and what the future of the restaurant industry might look like due to COVID-19. Colicchio helped form the Independent Restaurant Coalition to lobby Congress for relief for the industry. "We're really looking at saving every restaurant, because we think that every restaurant needs to be there," he says.
