In answer to the mystery of the disappearance of chestnuts: Disease has nearly driven the American Chestnut tree to extinction, only a few remain, and it's no longer financially feasible to farm chestnuts with the risk of an entire orchard being wiped out. We would still probably have men selling chestnuts in the street if there was still a large domestic source.

The Japanese flash-freeze their highest quality bluefin tuna for sushi.

Nuthin' wrong with flash frozen. The accelerated freezing process produces tiny ice crystals compared to slower freezing and retains all the original qualities.
