My Fair Butterhead: State Fair Foods, Culture and History

This week, more state fairs kick off than at any other time of the year. Fairs will open in Nebraska, New York, Maryland, Texas, and Minnesota, which attracts more fairgoers in its twelve days than any other state fair in the country (last year nearly two million visitors passed through the Minnesota fair's gates).

Linda Koutsky is a fair historian and co-author, along with Kathryn Strand Koutsky, of  “Minnesota State Fair: An Illustrated History.” She walks us through the history of fairs and fair foods.

And Elizabeth Olson, the Minnesota State Fair’s 2009-2010 “Princess Kay of the Milky Way,” shares her favorite fair foods and and experiences (most notably, having her likeness carved out of a 90-pound block of butter).
