Zora O'Neill blogs about travel and food at Roving Gastronome and runs the Queens dining club "Sunday Night Dinner" with Tamara Reynolds. She looks at the BLS lunch project and offers a few ideas of her own for tasty packable lunches.

I'm sorry not to have communicated sooner about the lunch topic. When I got out of the car, I forgot each time!
I am a retired teacher. I hated the chore of making lunch every day (for 36 years!.
Once the lunch stuff is out, it doesn't matter for how many you are preparing, so I found a colleague who teamed with me--she made lunch for both of us for a week, and I did the alternate week. Pure bliss for one week, and a challenge to do something nice for us both on "my" week.
Another friend would make a stack of sandwiches (no mayo) and freeze them.
By lunchtime, the sandwich would be thawed.

Oooh, great idea about the avocado! I will have to try that--I'm always looking for more ways to eat avocado.

I want to apologize for not donating earlier. I am a recent college graduate working entry level with an environmental non-profit (Rainforest Alliance). I just wanted to let you know your show, Leonard Lopate, Sound Check and Radio Lab (I HEART RADIO LAB!) keep my mind stimulated and going whenever I find myself performing mind-numbing entry level work, which is almost daily. Furthermore, yes, I did listen while I was in college, and often used WNYC as a springboard for any research project I’ve conducted in undergrad or to connect my studies to life beyond the classroom.

Oh and yes, we are facebook friends!

To change the egg salad a bit, add an avocado instead of using mayonnaise. It's healthier and yummy too!
