I have grown so many beets this summer! Do you have any interesting recipes for the leaves? I've heard they are very nutritious, but I never know what to do with them! Thanks!

they're great baked (like a potato) and then peeled. toss in salad, pasta, etc.
also tasty raw, here's a really simple recipe for raw beet and carrot salad that i love:

cook the leaves like you would chard or kale, collards, mustard greens
