How often should spices be replaced with newer ones? I found that some of my spices lose their potency and flavoring after a while.

Please ask your guests to discuss the uses of sumac.

    (1) At the top of this page, why does the food critic have her name in bold face while the cook and restaurateur does not?

    (2) Please direct the conversation to Ms Jaffrey as she knows infinitely more about food and spices than Ms Reichl ever will. Ms Reichl's comments are nothing if not completely vapid and content-free.

**Hi V.V. Thanks for pointing out that Madhur Jaffrey's name was not in bold. I've corrected the mistake, which was purely an accident. Thanks again!
