St. John in London (chef Fergus Henderson) ...Etxebarri (St. Sebastian). Takashi and Yakitori Totto in NYC. Chefs Michael White, Eric Ripert, Dave Chang, April Bloomfield, Gabrielle Hamilton, Cesare Casella, Joe Beef and Au Pied de Cochon in Montreal....Sukibayashi Jiro in Tokyo (chef Jiro Ono), the meal I regret not having--the Escoffier menu at Next in Chicago. What have you been eating this summer?
Been shooting in Iraq, Turkey, Cajun Country, Singapore, Hong Kong, Montreal, San Francisco, Rome, London, Amsterdam, Los Angeles. Vacationed in Lombardy. Ate a lot of pasta and salumi.
Do you have any writing rituals or habits? Where and when do you write?
On a legal pad in pen on the road. At home: early on computer. Very early.
What are your favorite words? And what are your least favorite words?
Favorite: F***.
Least favorite: Mouth-watering. Foodie.
What are your favorite foods to cook at home? What do you order when
you go out to eat?
At home? A fat rib steak bone-in. (to cook) I love making pasta. A simple braised stew: rabbit or cheap cut of beef.
To order out: Burgers. Chinese. Peking Duck. Fried Rice. Sushi. Pizza.

Tony, Did you ever go to CBGB's in the late 70's-early 80's? What a great music scene in New York back then.

Hi Tony how you doing ? My wife and I are big fans. She is from Oaxaca and I was raised in Peru. We where wondering what you thought of oaxacan and Peruvian food. What are you favorite dishes? Thanks again
I was thrilled that you took on that Southern/Smithfield Ham Hawker lady, Paula Dean. When I heard of the conditions of the pig farm manure pools in Mexico and the stench that the local people were forced to live near while this American company threw its considerable weight around, I could not understand how this woman could keep on smiling and hawking this product. Does she not get the law of karma? In the meantime, I want to know more about your wife -she must be some kind of together gal! Hope you have a happy home life, you deserve it!
I really enjoyed reading all the different essays that were submitted in the Medium Raw Essay Challenge. How many essays did read from all the submissions? Will you be having another essay contest?

My wife and I are planning to leave Brooklyn and move to Europe in the next year. We're considering an area with amazing food, culture, and happy people. We're thinking San Sebastian and Marseilles. Any other suggestions would be appreciated.
What is your favorite cheese?
Can you explain how mocking vegetarianism has become a badge of 'rebellious' honor among food media personalities? The vast majority of Americans are not vegetarian, so such a stance can hardly be considered rebellious. By eating meat you're not sticking it to the man. You are the man.
