Lidia Bastianich inspires new respect for food and for the people who produce it in the little-known parts of Italy. Her newest cookbook, Lidia Cooks from the Heart of Italy: A Feast of 175 Regional Recipes, includes recipes from all over Italy, translated for home kitchens.

I have some leftover roast chicken to use for tonight's dinner. Does Lidia have any suggestions?
I am amazed that simple peasent food has been made into some sort of science. This is basic foods with simple ingredients. I also sense an arrogance with this guest.

As an avid cook with very limited space in her kitchen, and limited time can you tell me what YOU consider the basics that every home cook should try to keep in their pantry and ALSO have in the way of Pots and pans, equipment etc...
These days we get caught up with fancy gadgets and a pot for every seasons ...what tools can't YOU live without??

We love watching Lidia on PBS. We love her wholesome outlook towards cooking and life. We now know more about Italy and its various cuisine thanks to her. My 13 year old and I try out many of her recipes quite often in our kitchen. Please ask her - before all purpose flour became the norm for making pasta, how did they make pasta, was it whole wheat flour? Since it is better for health, are the Italians moving towards whole wheat pasta?
