Mario Batali says it's easy to make delicious Italian food on a home grill! His new cookbook is Italian Grill; his recipes include Fennel with Sambuca and Grapefruit, Guinea Hen Breasts with Rosemary and Pesto, and Baby Octopus with Gigante Beans and Olive-Orange Vinaigrette.

Not yet famailiar with Calamari but will soon be up to speed with it. Hope this helps.
Why don't celebrity chefs spend more time promoting healthy eating habits? Don't they see how their food and cooking marketing may directly impact America's obesity epidemic?
Wouldn't fish have a mer-oir instead of a terr-oir?
Ask him for a great use of aged aceto balsamico (balsamic vinegar). I have a bottle that cost a fortune that I brought home from Italy and I don't know what to do with it.
My Perugino Nono used to cook whole chickens wrapped in lard (!), rosemary, salt and pepper over an open pit charcoal grill. It was the highlight of the Summer!
Please ask him how to make that hand-rolled pasta I saw an Italian grandma make with him on Bittman's show - served with breadcrumbs.
Concord grapes are not "indigenous" anywhere. It's a hybrid plant, invented in Massachusetts.
