Peter Luger
This week on Dish, a lotta steak and a whole lotta sizzle. Ed Levine and his guests indulge in some meaty conversation at the renowned Brooklyn steakhouse, Peter Luger's. Debating every side of the food politic are Ed's guests: Michael Pollan, the John S. and James L. Knight Chair in Journalism at UC Berkeley and author of Botany of Desire; Gabrielle Hamilton, chef/owner of Prune in the East Village; and Professor Marion Nestle, chair of the Department of Nutrition and Food Studies at NYU and author of Food Politics: How the Food Industry Influences Nutrition and Health.
Peter Luger's has been home to the greatest porterhouse in the city for more than a hundred years. The Foreman family hand-selects their steak during their daily visits to the wholesale meat market and then ages it for what tastes like 3 months (they won¹t say for how long).
