Just got to listening to this later in the day.
Kind of a train wreck interview. Seemed like Jim Weaver was on the defensive on a few topics even though Amy wasn't really challenging him.
Regarding foie gras, here's:
Dan Barber's Foie Gras Parable

It's both pro foie gras and anti-foie gras at the same time.
It's ironic that foie gras is the symbol of Slow Food.
The renowned Italian recipe for...

Oh, boy.

what is your point? not everyone likes foie gras. and have u ever had rat? maybe u should try something before u put it down
I have nothing against foie gras, per se but, there is nothing "natural" about force feeding an animal until it's liver is fat saturated and diseased.
$600 meals are immoral.
How is "local, fair and safe" food sustainable if no one can afford it??
It will only be sustainable is more rather fewer people can afford it.
Elitest food is dumb.
Stories like this are really starting to make me nauseous. Last night I watch a BBC documentary in which a little girl, maybe five, is talking about how her mother had to catch a rat and cook it in order to have something to eat. Guess where this was? Las Vegas, Nevada. This country. I turn on WYNC this morning and what are you talking about? How it's great to pay $600 for a meal of tortured geese. Bravo. Do you realize how absolutely insane and out of touch you seem?
Force feeding geese is "natural"? Just how stupid do you think people are? What a crock. Good, clean and fair - not for those geese, huh?
Force feeding geese is "natural"? Are you out of your mind? Just how stupid do you think people are?
Good, clean and fair? Yeah, it's real fair to those geese. What a crock.
Jersey tomatoes are mainly about the soil and the climate ( as are those in maryland and virginia )
Out west the alkali soil and intense sun makes blah tasting tough tomatoes ( the toughness good for shipping )
I this case geography really counts.
Jim, it is FAR from natural to force-feed duck and geese to the point of having a sickened, fatty liver and then killing them for it so we can enjoy it as something some close-minded people consider a delicacy. That's just...idiocy.
I lived in NJ for many years and completely enjoyed fresh local NJ produce every spring, summer and fall. I do the same out here in Ridge NY. I 100% support buying as much local produce as possible. But could you please ask your guest how the slow food movement is supposed to realistically work in a city like Las Vegas that sits in the middle of a desert with no local water source?
What Italian recipe calls for the French foie gras??
