Spaghetti with Dungeness Crab Meat, Jalapeno Chili and Lemon Butter



3/4 pound of Organic spaghetti
1/2 pound fresh picked Dungeness crab meat (or any good Maryland crab meat)
1 jalapeno chili ( stemmed and sliced thinly)
2 shallots (peeled and minced finely)
1 Lemon ( juiced)
4 tablespoons butter

1. Cook spaghetti in boiling salted water

2. In a saucepan cook the minced shallots, and sliced chilies with 1 tablespoon butter, season with salt and pepper, until tender (about 3 minutes).

3. When pasta is al dente, toss into the sauce pan, add the crab meat and the rest of the butter. Heat pan to medium and stir until butter has melted into spaghetti. Add the mint and taste. Add salt or pepper if necessary. Serve hot.
